Gluten Free Strawberry Apple Crumble adapted from Teresa Cutter "the Healthy Chef"
Ingredients
4 large red apples, cut into chunks ( not peeled)
125 ml apple juice
Zest from 1 orange
500g strawberries ( fresh or frozen)
1/2 cup macadamia meal
1/4 cup flaked almonds
1/2 teaspoon cinnamon
1 teaspoon vanilla extract
20g macadamia nut oil
25 g honey
Method
Combine the apples, apple juice and orange zest in a saucepan.
Cook over a low heat for about 20 minutes until the apples are soft and liquid has evaporated.
Fold the strawberries through the warm apple and place into a baking dish or individual ramekins.
Combine macadamia meal, flaked almonds, oil, vanilla, cinnamon and honey until all are coated.
Sprinkle over the apple and strawberry.
Bake at 175 C oven for 30 minutes until golden.
Serve with natural or vanilla organic yoghurt.
Macadamia Pesto 
Ingredients
3/4 cup roasted macadamia nuts
3/4 cup basil leaves (firmly packed)
1/4 cup baby spinach (firmly packed)
2 cloves garlic
1/3 cup parmesan cheese
1/3 cup macadamia oil
pinch salt to season
Method
Place nuts, basil, parsley, garlic and cheese in food processor and process until finely chopped.
With the motor running, add the oil in a thin steady stream until well combined.
Season to taste with salt.
Gluten & Dairy Free Banana Macadamia Icecream

Ingredients
6 ripe bananas
1/2 cup pure maple syrup
2 tablespoons macadamia oil
2 tablespoons rapadura sugar
1 cup coconut milk
1/4 teaspoon xanthan gum
1/4 teaspoon sea salt
2 teaspoons vanilla extract
1/2 cup chopped roasted macadamia nuts
Method
Preheat the oven to 180 deg C.
Peel and slice the bananas and place in a baking pan. Pour over maple syrup and macadamia oil. Sprinkle with rapadura sugar. Stir to coat.
Bake for 30 minutes, or until soft, gently stir once.
Remove and place in food processor with cocnut milk, xanthan gum, sea salt, vanilla
Blend till smooth. Chill approx 30minutes or until cold.
Add macadamias and place in ice cream maker, follow the manufacturer's instructions.
